Here's my first attempt at deep fried turkey chunks: I cut the turkey breast and thighs into 1" turkey chunks. Then I mixes some eggs with milk. I also mixed some seasoning into a cup of flour. I dipped the chunks into the eggs, and then dredged them through the seasoning and flour. (I used Old Bay seasoning plus another seasoning that I don't remember the name of -- it's what we had on hand.)

Then into the fryer it went. I probably used a little too much seasoning because most pieces were on the salty side. Be careful because no matter how much seasoning you put into the flour, it doesn't look like there's much there.

Very good eating -- as good as turkey gets, and extremely tender.

I do almost the same thing. I do not season the flour or I will after egg/milk wash use italian bread crumbs.  I also used a buffalo wing sauce as the wash then the bread crumbs. They taste great either way.

For you guys who like the deep fried turkey chunks, you should try this:

cut the chunks to desired size
soak them in buttermilk
roll in instant cornbread mix
deep fry in peanut oil

It is good!!

yum. I may need to get me some buttermilk and a turkey breast this weekend and try this last one out.

I also use the Italian bread crumbs with some garlic salt and parm. cheese added to it

Buffalo wing sauce sounds awesome. I got to give that a try. G8 post.

That's how i did my bird last year...yummy.
