This sounds awful, but it works.  I'll swear by it.  My wife started calling Turkey-Q.

Take the legs and thighs and put them in a crock pot with 1 TBSP of instant coffee.  That's right, instant coffee grounds like Sanka, etc.  Cook all day on high or the automatic setting that will reduce temp to low after several hours.

After about 8 hours, or when you get home from work, pull the meat out and discard the nasty coffee water.  The meat will literally fall off the bone.  Debone and wash all remaining coffee grounds off.  Put in a bowl and mix with your favorite BBQ sauce.  Makes great BBQ sandwiches.

This is a good recipe for those normally tougher than nails legs and thighs.  FYI, coffee turns acidic when it reaches boiling temperature.  This is what helps tenderize the meat.  That's why coffee makers get hot, but do not boil.  Boiled coffee tastes awful.

It beats throwing the legs and thighs away.  I've talked to guys that breast them out and throw the rest away.  It doesn't sound good, but it works I swear.

Hey Josh,

Thanks. I think it's good to be able to use as much of the game we shoot as possible. I've never heard of that recipe but it's worth trying.

Yelp Softly,

  Is there any hint of coffee flavor in the turkey when it's done?  I'm intrigued by your recipe, but grossed out by any hint of coffee flavor in anything.  I wonder if beer would be a good substitute to help tenderize the turkey? :)
